You might not be familiar with Hacking with Swift if you are coming from the development world outside of the Apple community. Paul Hudson has created one of the most valuable resources around for Swift development. Many of his courses focus on iOS development, but a lot of the concepts carry over to visionOS.

SwiftUI by Example is my favorite series. It is a massive series of byte-sized tutorials and examples. These cover nearly everything you will ever need to know about SwiftUI. You can build on these concepts when building the 2D UI in you visionOS windows and attachments. This series will also provide a solid foundation for managing state in visionOS.
